If you would like to eat something so totally delicious that you will want to kiss me in gratitude, then make this recipe:
ENCHILADAS VERDE
one rotisserie chicken
one jar salsa verde
one cup quinoa, cooked
one 8oz cup plain yogurt
two 4oz cans green chilies
8oz monterey jack cheese, shredded
extra large flour tortillas


In a pot, put the salsa, yogurt, and chilies together.  Let warm while you shred the chicken and cook the quinoa.  Put the salsa mixture into a blender or use a stick blender in the pot to combine thoroughly.  In a large bowl, put the chicken, the quinoa, 4oz of the shredded cheese (PLEASE shred this yourself.  Did you know they put a coating on the bagged pre-shredded cheese to keep it from sticking together?  I am totally grossed out by that.) and about 1/2 the salsa/yogurt mixture.  Stir this together.  Fill the tortillas and roll them up, placing them in a greased casserole dish.  Pour the extra salsa/yogurt mixture over the enchiladas and top with the rest of the shredded cheese.  Bake at 350° for about 20 minutes.  Eat them, and die of deliciousness.

Oh how I LOVE Salsa verde. I think I would LOVE these. I echo Jen.
